This easy dish is a great make-ahead breakfast that can be kept in the refrigerator all week long for busy mornings!
Preheat oven to 350°F. Grease 13- x 9-inch baking dish; set aside.
In saucepan, combine milk, brown sugar, cinnamon, ginger and salt; bring to simmer over medium-low heat. Stir in peaches and oats. Transfer to prepared baking dish and sprinkle with granola.
Bake for 50 minutes or until liquid is absorbed and oats are tender. Serve with dollop of yogurt and drizzle of honey.
Tip: Substitute coconut, almond or soy milk for milk if desired.
