Mexican-Style Street Corn with Cornflakes

Add a little spice and a lot of crunch to your grilled corn with this Mexican-style street corn recipe. Add a pinch more paprika if you like things hot or try a squeeze of lime if you want some zip! 

  • 4 ears corn, husks and silk removed
  • 1/3 cup 2% Greek yogurt
  • 2 tbsp chopped fresh cilantro
  • 1 tsp finely grated lime zest
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/2 tsp paprika
  • 1 cup crushed Nature’s Path Fruit Juice Sweetened Corn Flakes™
  1. Preheat grill to medium-high heat
  2. Grease grate well.
  3. Grill corn for 10 to 12 minutes or until grill-marked and tender
  4. Stir together yogurt, cilantro, lime zest, lime juice, garlic powder, salt and pepper; spread over warm corn.
  5. Sprinkle evenly with paprika.
  6. Add crushed cereal to shallow dish; roll corn in crushed cereal until evenly coated.
