Chai-Spiced Vegan Baked Doughnuts

Team up these tasty treats with a latte or espresso for a luxurious midday snack.  

Ingredients: 
  • 1 cup all-purpose flour
  • 1 cup almond flour
  • 3/4 cup finely crushed Nature’s Path Coconut Chia Granola
  • 1/3 cup brown sugar
  • 2 tsp baking powder
  • 2 tsp egg replacer
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/2 tsp salt
  • Pinch ground cloves
  • 1 1/4 cups almond milk
  • 2 tbsp melted coconut oil 
Directions: 
  • Chai Spiced Doughnuts: Preheat oven to 350°F (180°C). Lightly grease 12-hole doughnut pan; set aside.
  • Whisk together flour, almond flour, granola, brown sugar, baking powder, egg replacer, cinnamon, ginger, cardamom, salt and cloves. Whisk almond milk with coconut oil; stir into flour mixture.
  • Divide batter evenly in prepared pan. Bake for 12 to 15 minutes or until golden brown and toothpick inserted in centre of doughnut comes out clean. Transfer to rack; let cool completely.
  • Cashew Icing: Combine cashews, coconut oil, almond milk and maple syrup in food processor; blend until smooth. Spread evenly over doughnuts and sprinkle with granola.

Tip: To soak cashews, submerge in water and let stand, uncovered, at room temperature overnight.
