Blueberry & Cashew Butter Breakfast Crostini

Serves: 
1 cup cashew butter

 

Thick and creamy cashew butter is delicious anywhere you’d usually use peanut or almond butter! We spread this mild nut butter over some Blueberry & Chia Sunrise Breakfast Biscuits and added a spoonful of warm blueberries, a drizzle of maple syrup, and a sprinkle of granola for a healthy and decadent breakfast crostini.

Ingredients: 

Cashew Butter:

  • 2 cups raw cashews
  • Pinch sea salt

Crostini:

Directions: 
  1. For the cashew butter: Add raw cashews to a food processor or high-speed blender and process/blend on high, scraping down the sides to redistribute the mixture as needed, until the nut butter is completely smooth. Store in refrigerator.
  2. For the crostini: Spread Sunrise Breakfast Biscuits with cashew butter and top with a spoonful of warm blueberries, a drizzle of maple syrup, and a sprinkle of granola.
